Cleansing Ale now in elegant 375ml bottles. Refreshing, bottle-conditioned Farmhouse ale, perfect to quench the thirst! This ale has been brewed to introduce consumers to the fascinating world of our natural Farmhouse Ales and uses only Tasmanian grown ingredients. Aromatically hoppy in youth, once these rather transient characters subside after a few months, the ale gently sours over time in bottle. This gradual and controlled increase in acidity refreshes and revitalises the ale as it ages, ensuring that whenever you choose to enjoy a bottle, it will always be “cleansing”! 4.9% alc. vol.

Features farm grown raw ingredients. The organic spelt is sourced from Kindred Organics, while the barley and rare, aromatic hops are from both our own and other carefully selected farms along the Derwent River Valley. Using the indigenous micro flora present on the grain, we encourage a 36-hour lactic fermentation of the wort prior to inoculation with selected yeast. The rarity of individual ingredients, coupled with the very specialised brewing technique leads to an exceptionally unique brew of unparalleled regional character. 5.2% alc. vol.
Our Forester Bitter Amber Ale features hops grown in the Forester River region of North East Tasmania. Like the best wines, every bottle of this ale is an expression of regional character and reflects the passion of our brewer – also a winemaker – for discovering and showcasing the provenance and individuality of the unique ingredients.
Malty, with balanced bitterness in youth, with bottle age it will develop a unique complexity and very mild and balanced acidity due to our use of mixed fermentation in this product, incorporating our indigenous farmhouse wild yeasts with selected commercial strains of brewers yeasts. This carton contains 12 of the 500ml bottles. 5.5% alc. vol.
Our Huon Dark Apple Ale starts as a rich and robust dark ale fermented with brewer’s yeast. We then add up to 25% whole apple juice from Tasmania’s pristine Huon Valley (or “Apple-HQ” as we like to call it!) and re-ferment with a selected champagne yeast. Extended tank maturation pre-bottling, a third fermentation in bottle and, preferably, months of bottle-age completes a very individual ale of extremely complex character. This ale truly is a ‘uniquely Tasmanian experience’ and can be enjoyed now or will reward cellaring by developing more complexity with age. There are 12 of the 500ml bottle in this carton. 6.5% alc. vol.
This is the 2016 harvest release, 100% wild fermented for the first time. Exclusively using the very rare, exceptionally flavoured, high-acid and very late-picked Sturmer Pippin apple our Apple Cider is fermented to complete dryness. Remember, you can always sweeten a dry cider, but you cannot dry a sweet cider … so buy naturally dry ciders and sweeten to taste as apple cider truly is one of the few beverages for all occasions. Our cider uses 100% whole, tree-ripened apples (rare than you might think!!), no additives (NO Sulphur Dioxide!!), no filtration, no added water … nothing but the goodness of apples from Tasmania’s beautiful Huon Valley! 7.5% alc. vol. .

The breathtakingly beautiful Tasman Peninsula is the source of the pears used to make this cider. Know as ‘Perry’ to the English, we have opted for the French word ‘Poiré’ in recognition for our preference for sparkling ciders and reminding us of many years winemaking in France prior to our return to Tasmania. Our POIRE is fermented to be dry, but as pears contain non-fermentable sugars and lack natural acidity, we employ acidic fermentation to counteract any naturally residual palate sweetness. We really do push the fermentation boundaries on this product, resulting in a profoundly unique, character-laden beverage that clearly distinguishes itself from any other Pear Cider currently available on the Australian market.
