Bush HONEY - Limited Offer

We are so lucky to have struck up a conversation with Peter & Trisha Norris of Heritage Honey many, many years ago now.  We were buying their honey either from the front door of their home in Hobart or at their market stall on a Saturday morning at the Salamanca Market.  We offered them a corner of our farm to house some of their hives and we have been making our Sparkling Mead with the resulting production ever since. Many of you will be very familiar with this sparkling sensation!

Now is your chance to also buy some of the raw 2023 BUSH HONEY and have it delivered to your door. (Available all states EXCEPT Western Australia & Kangaroo Island.)

A choice of either 1.5kgs box or 3 kgs box.  Delivery is included in the price. 

This batch of honey has been made by the bees resident here on our farm in the Derwent Valley in November & December 2023.  The honey was extracted in early February 2024.  We have used a lot of this year's dark, golden elixir to make our 2023 spontaneously fermented Sparkling Mead which has already started its spontaneous fermentation journey.

Like every year, this honey presents completely differently from any previous year.  2023 was a shocker in these parts; the 2nd driest year in the 20-years we've farmed this land and a real challenge for both us, and evidently, the bees!

This honey is intense, extremely dark & deliciously concentrated.  Drought honey! From a year where only 300mm of rain fell in the entire year, our apiarist couldn't identify the flowers responsible so called it simply "bush honey".

We adore this project! Nothing else represents the past year seasonally with quite the same reality, honesty & accuracy as does this honey.
