As pears contain non-fermentable sugars and lack natural acidity, we employ multiple, long, slow, complex, wild, acidic fermentations to counteract any naturally residual palate sweetness. We REALLY do push the fermentation boundaries on this product, resulting in a profoundly unique, character-laden, acidic “sweet & sour” beverage that clearly distinguishes itself from any other Pear Cider currently available in the international marketplace.

The breathtakingly beautiful Tasman Peninsula is the source of the pears used to make this cider. Know as ‘Perry’ to the English, we have opted for the French word ‘Poiré’ in recognition for our preference for sparkling ciders and reminding us of many years winemaking in France prior to our return to Tasmania. Our POIRE is fermented to be dry, but as pears contain non-fermentable sugars and lack natural acidity, we employ acidic fermentation to counteract any naturally residual palate sweetness.
