2022 Vintage. Just apples! You know, the fruit that grows on trees …? Yeah, them! No added water, no sugar, no antioxidants, no processing aids, no enzymes, no sulphur dioxide, no filtration, … NO yeast! Just apples! Pressed, spontaneously wild-fermented, matured (& then matured for even longer!), bottled and spontaneously wild fermented again for a sparkling finish that is completely bone dry. 7.1% alc. vol.

Whole hive honey from our farm solubilised in water, wild fermented and aged in barrel. Refermented in bottle using spontaneously fermenting solution of honey. This release is a blend of mostly 2023 mead with some 2019 and 2024. All aged individually before blending just prior to bottling. Deliciously light & sparkling. A delightful floral note and great acidity. The ultimate expression of terroir. 6.8% alc. vol. Available for immediate delivery.
